Millet Pongal

(South Indian-style)

How to prepare

  • 1 cup millet (foxtail or little), rinsed

  • 2 cups water

  • 1/4 cup moong dal

  • 1 tsp ghee

  • Salt, to taste

  • Optional: cashews, ginger, and spices

Combine millet and dal, cook until tender. Mix with ghee, salt, and spices.

How to prepare

  • 1 cup millet flour

  • 1/2 cup almond milk

  • 1 egg

  • 1/4 tsp baking powder

  •  Honey or maple syrup, to taste

  • Butter or oil, for greasing

Mix wet and dry ingredients separately, combine, and cook on a non-stick pan.

Bajra (Pearl Millet) Roti

How to prepare

  •  2 cups bajra flour

  • 1/4 cup whole wheat flour

  • 1/4 tsp salt

  •  1/4 tsp ghee

  •  Water, as needed​

 

Knead dough, roll out, and cook on a non-stick pan.
